
The open food market has been an integral aspect of European food culture for thousands of years – and now it is under threat. Once a daily and later a weekly feature in every community, where all the fresh indigenous produce and popular artisanal products were brought for sale, the shop and the supermarket have supplanted the food market and changed its role in society. This has not gone unnoticed. The food market has become a cause celebré and there is a wind of change on the horizon. Over the next 18 months we will feature iconic food markets in every European country and a few farther afield. For the moment this is just a taster.
