Ottoman and Persian food has an influence yet Armenian traditional meals manage to stand apart from neighbouring Anatolia, the trans-Caucasus and Iran. Meat is the centre of Armenia food, with aubergines, rice, yoghurt, vegetables and herbs prominent. Khorovats, barbecued chunks of beef, chicken, fish, lamb or pork with aubergines, peppers and tomatoes, served with lavish, a thin flatbread, is a very popular dish. These five come in close behind.
